Healthy Deserts


RAW Chia Seed Pudding - similar to Tapioca Pudding!

This is a delicious recipe and super easy to make! You can adjust the thickness of your pudding by adding less water, keep in mind it will thicken in the fridge as it sets.

2 cups cashews (raw) - soaked 2-4 hours
3 cups water
3 Tbsp agave
1/2 tsp vanilla powder or 1 tsp vanilla extract
1/2 tsp almond extract
pinch of sea salt
1/2 cup chia seeds

Place cashews and water in your blender and blend on high till smooth
Blend in agave, vanilla, almond extract, and sea salt
Place the chia seeds in a large jar, pour the cashew mixture into jar, now use your muscles and shake!
Place in the fridge 6-8 hours to set (if you can resist dipping in!)
Top with blueberries, or your choice of fruit and serve!
